Black beans are...black beans! AKA turtle beans. They are different from the adzuki beans you mention, and also not to be confused with soybeans, which are also black. They are indeed very healthy -although if you are sensitive to "purine" you have to be careful). I don't know about fermenting them. Most fermented black beans I've read about seem to really be fermented soybeans, so you really have to read the packaging. Black beans
