Ceviche is raw fished "cooked" really marinated with lemon. The acids in the lemon cook the fish, so it is safer I think than raw fish (and is considered raw ) I had this in South America and it was great. You can use salmon or google ceviche recipes. I don't eat fish anymore and the only thing i miss is fresh ceviche!
