Looking over some digital images
this afternoon, I came upon some
of beets. I had Ms Dazzle in mind
when I took this image.

So here is a story for the Juicers..
from the annals
of the History of Peace on Earth.

Enjoy!

When the world of health
was very much Vital with the
energies of the likes of Bernard Jensen
who had a very charismatic twinkle in his eye,
and capacity to completely Wow people into doing
all kinds of natural health treatments such as
juice fasts and various bowel cleansings regimens,
I was sitting on a gloomy wintery day,
sort of like a day like this, down at Harpo's
Health House by the Sea, a little enchanted
store in Mission Beach. The famed Master
Food Maestro Harpo would put out his wonderous and taste
tempting foods from this little location.
On a winter day, Harpo, the inventor
of the word "Smoothie," leaned toward warm soups.
Harpo was the King of Soups, and Stews, and something
he called his Gypsy Pancake that were thick with oodles
of wonderous organic faire.

I was sitting at the counter editing "Nature has a Remedy"
for Bernard Jensen. I was going through page after page
reading outloud to Harpo the various attributes of
different Holy Organic Gifts from Mother Earth.

Jensen is without a doubt the greatest food romantic
Mother Earth ever had. He could talk about his vegetable
or fruit equal or beyond what Madision Avenue could pitch
about this or that car using this or that beautiful woman
to make their point.

Jensen knew his vegetables and he knew his naturally
occuring minerals that made up the structure of
each vegetable. He would peer into the iris of the eye.
He would see an organ, such as the liver. He could tell
if it was Hypo or Hyper in activity. He knew the various balances
that each organ wanted both in minerals as well
as the foods that were richest in each mineral.

Jensen was an Aries, born March 25, 2008.
He left the body in February 22, 2001.
Aries are one of the sexiest signs of the
Zodiac. Jensen knew how to bring each and every organ
to a state of orgasm, so to speak, or at least saying
"Ha Cha Cha!" Jensen always said that the Liver loved
beets. A food PR man like Jensen was only half complete
without Food Maestros like Harpo. Harpo was born on
Valentine's Day or so the legend went, so anyhing he
touched, was certaiinly going to be full of Love.

Here is a little something from
"Nature Has a Remedy,"
just so you get the idea.
That was the book I was editing
at the time.

P. 44:

"Too many liquids can thin the blood
and cause ringing disturbance in the ears.
Eating too many starches, which cause too heavy
blood, and too hot blood in the summer time,
can cause headaches.

Remedies for Headaches.
If there is an anemic condition in the body,
it may cause a headache.
Turn to the iron foods and get plenty
of oxygen by living outside in a cool, invigorating
atmosphere. Use more of the iron foods;
blackberries, strawberries, cherry juice,
and spinach.

If your headache is cause by a disturbance
in the liver, use beets in the diet;
shredded beets, shredded raw beets,
cooked beets, beet juice.

Have beets in the diet every day."

Get the idea???

Here is a taste of Jensen
from P. 73. He is talking about
Foods and Bowel Problems.

"3. Be sure to always use green leaf lettuce,
such as Bibb, Romain, or Reditipped.
Bread causes a dry, hard stool because
the heat used in baking it dries the oils of the grain.
Use cereals instread, and vary these to include
brown rice, yellow corn meal, millet, rye,
and ground wheat. Ground wheat is a wonderful
food for good bowel activity. Prepare it by
placing one-half cup of ground wheat
in two cups of hot water. Put this in a thermos
bottle, cork it, and leave overnight to soak.
In the morning it is ready to eat. Sweeten
only with dried fruit, never with sugar.

4. Beets are good for the gall bladder nad the liver.
They are good for building blood. Shreaded beets
are one of the best things served. use an amount
the size of a golf ball once a day. If fresh beets
are not available, use beet tablets."

P 148: from the Chapter
"Let's Learn about Foods."

"Beet greens contain oxalic acid, but not
so much as spinach and Swiss chard.
Use them raw in salads or streamed.
The stems contain more iron than the leaves.
They are also good for cooking. To prevent
burning of food cooked in stainless steel pans,
place some raw beet leaves in the bottom of the pan."

Now there is a man who knows his beets!

So here I was, on this cloudy day.
Harpo was in the middle of placing his food order
for his Health House by the Sea.

They would bring down what we wanted in those days.

He would go back and forth between cooking his soup,
and making the order, sort of wondering off into Cosmic
Dream Time with the ingredients that would speak to him.
Such was his way.

So here I was, editing from the book, reading out loud.
I would read about the attributes of lettuce.
I would read about the attributes of spinach,
I would read about the attributes of turnips.

Every time I turned the page, here was this very
romantic and deep love affair in print with this or that
vegetable and an extremely convincing argument.

The last sentence of each page was
"Turnips, the greatest food of all!"
or "Carrots, the gretest food of all!

Jensen had stories about each food.
He knew exactly how to use them for upmost therapeutic
benefit, but his enthusiasm crossed beyond science
into a definite love affair filled with hyperbole

So each time, I finished reading, Harpo would get
on the phone, and add to his order.

"Henry, please add two pounds of Turnips!"
Then he would hang up.

I would read more, ending with
the line that went, and for this and that
reason, without a doubt, "Carrots, or ---
fill in the blank--is the greatest food of all!"

This was going on for about twenty minutes,
when I finally came to Beets.
Without a doubt,
"Beets, the GREATEST FOOD of ALL!"

Without missing a beat, Harpo redialed
the number of Henry, our food man.

"And Don't forget two pounds of Beets!
Harpo said, "The Greatest Food of All!"

We both laughed.
