Boiled eggs; carrot sticks; nuts/seeds if you aren't allergic; granny smith apples; you can make a dip out of avocado and dip veggies, brown rice crackers, or corn tortillas if you can tolerate them.
I would look into stevia. I make brown rice and add cinnamon and stevia, and then bake the cooked rice w/ granny smith apples and goat butter. It is carbs...yes...but if you have that for breakfast and then a salad for lunch, and veggies and chicken or fish for dinner w/ a few low carb snacks in between, like carrots or boiled eggs, your carb load for the day won't be too high. Brown rice w/ Sea Salt , black pepper, and mashed avocado mixed in is also very good. These two aren't snack options but I though I'd share them w/ you anyway. Lots of people on this board think brown rice is constipating, but it doesn't do that for me. You should also try cream of buckwheat. Add some cinnamon and stevia to it and it's a great breakfast.
