Hey, wheat is the staff of life, right? It IS hard, and people do look at you with suspicion. I just try to avoid the subject while people around me are coming down with "sinus infections" galore...
My husband ate some sourdough bread the other night. Next morning, totally congested, sneezing. He's been doing the gluten-free thing with me(most of the time). Now he's on board, full-time.

Oh, I am so with him LOL. In early days I'd get whiny just thinking about all the things I wasn't baking. Now, not so much. I suppose someday I'll give a try to some of Dr. Davis's recipes. He had a carrot cake one that really sounded pretty good. But not yet. I don't need ANY encouragement to eat sweet stuff, gluten-free or not :)
I generally resist the urge to "substitute". Most of the GF-free stuff out there is just crap, white rice flour, tapioca starch, potato starch, etc.
There is a gluten-free bakery here locally and I do buy a loaf of bread, occasionally, I confess. Mainly because I want TOAST. And I want a LOT of butter on that toast!
I have not tried any of Dr. Davis' recipes. I'm quite familiar with low-carb eating... hmmm, I always felt fabulous when I was low-carbing. Could it have been the elimination of gluten? :)
This morning I ate Arctic Char for breakfast and my whole house thought I was nuts.
This article hit home for me as I am constantly being looked at funny.
However, I have lost 8 pounds, 3% body fat, and gained 2% muscle mass (my doctor has been keeping track). I do feel better and MUCH more level headed. No more feeling stressed at all!
