I'm roasting right now, and my whole house smells amazing!!!
2 cups large dice yellow onions
2 cups large dice leeks, green and white parts, well rinsed
2 cups mushroom trimmings, wiped clean
1 cup large dice carrots
1 cup large dice Celery
1 cup large dice turnips
1 cup large dice parsnips
1 cup large dice yellow squash
1 cup large dice zucchini
8 Roma tomatoes, quartered
1/2 cup garlic cloves, peeled
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon fresh cracked black pepper
1 gallon water
2 tablespoons fresh thyme, or 2 teaspoons dried
8 parsley stems
4 basil stems
2 bay leaves
2 cups white wine
Preheat the oven to 400 degrees F.
In a large roasting pan, spread the onions, leeks, mushrooms, carrots, celery, turnips, parsnips, squash, zucchini, tomatoes and garlic cloves. Drizzle with the olive oil, and season with the salt and pepper, stirring to coat. Roast for 45 minutes, stirring, every 15 minutes to brown evenly.
Remove from the oven and transfer to a large pot. Add the water and herbs, and bring to a boil. Reduce the heat and simmer for 20 minutes, skimming to remove any foam that rises to the surface. Add the wine and cook for 30 minutes.
Remove from the heat and strain through a fine mesh strainer into a clean container. Use immediately, cool in an ice bath, then refrigerate in an airtight container for up to 5 days. (The stock can be frozen for up to 3 months.)

Thanks for the recipe; I got it the first time around and printed it immediately it's in a pile with all of the other delicious vegie type recipes that I've seen on the Food Network.
Please let us know if you like the recipe and what (if anything) you would do to inhance the flavor.
I also like your idea of coming off of the fast with vegie stock, grapefruit and blueberries for the same number of days as on the MC. I think when I get to that point I will give it a try. What about you, how are you coming off of the fast?
I went to the health food store today and bought liquid Bentonite and powered psylium. I've been doing the SWF for 10 days now(YUCK) and haven't passed anything but water so I thought I would try the P& B shakes just to make sure ALL of the crud gets flushed out. Should I continue to do the SWF in the moring and have a P & B shake in the afternoon? Or, should I alternate the SWF and P & B shake? Have you tried alternating between the two? Did you have more that one P & B shake per day?
Well Congrats again Jen on a job well done. Best wishes and thanks so much for your input, I hope that you will keep us posted on how your body adjusts to breaking the fast and taking in solid foods, etc.
I did PB shakes, but not really. Instead of psyllium, I used flax, and ground my own meal for each shake. Much better for you, I think! I used them two times a day, about 10 a.m. and 5 p.m. SWF works for me, but I enjoyed the tea and got the same results, so I did tea at night and first thing in the morning. Very good results. Smooth moves, and brew it right, or else!
Made the stock today, very very tasty with a few changes, I made a double batch and used a whole bottle of white wine, half to deglaze the roasting pans and get all the good stuff stuck on the bottom, and the other half in the pots! Very good!
Next, I put in organic tomato paste after roasting, very smart, chef at whole foods told me to do that.
Next, I used cilantro stems, a whole bunch, instead of parsley and basil, which I don't care for too much. Yum! Except for dried bay leaves, DO NOT PUT YOUR HERBS IN UNTIL 10 MINUTES BEFORE THE STOCK IS DONE! THE OILS FROM THE FRESH HERBS WILL BE LOST IF YOU OVER COOK THEM. Chef at Whole Foods again, coming thru!
Next, I added Celery root and it was great. Next time, I'll use rutabaga too. I should have used more garlic, as I love garlic.
I sampled the veggies after my OJ today. The veggies are great, and a good way to slowly get back into solids. I had no trouble with them in limited quantities, one here, one there. I threw most of them out, but saved about a cup for tomorrow.
I'm going out of town tomorrow, but I'll check in on Monday to see how you are! Doing my liver/gallbladder flush tonight and tomorrow before I leave. It tastes terrible after the delicious stock, but oh well. I've come too far to not finish my goal.

p.s. The stock/soup (throw in some of the saved veggies) and blueberries and grapefruit will work wonders for weight loss, and don't forget a good glass of red wine to go with your soup! Wink!
Jen - I am doing the MC and PB shakes and wanted to find out your regimend. Did you do the lax tea, PB, and MC? If so, did you wait an hour before and after your PB to start drinking water or your lemonade? Someone mentioned to me that I had to wait to an hour before and after a PB to start drinking. I find it hard since I have to work and try to get in the 64 oz of water and 64 oz of lemonade in from morning to afternoon and doing the same at night if I have to wait an hour before and after.
What worked for you? I apprecite your advice. Also, how long did you do the fast for?
