It is true that God gave special consideration for those who wish to eat meat, just like He gave consideration for those who wish to have sexual relations. There are authorized ways and non authorized ways.
I did not become vegetarian over night and I also got sick enough times from detoxing and not knowing what is a proper vegetarian diet. I was raised on 3 squares a day and nearly all meals had meat, it took nearly 6 years to gradually cut out meat. Red and processed meats went first, gradually lessening portions and how many times per day, then per week, then per 2 weeks, then per month, etc. The last kinds of meat eaten were chicken, fish, and eggs, then finally eggs. Now strict vegetarian for many years I feel better than when I ate meat. According to Dr. Wallach I may die sooner, I don't believe it, and even if I do die early, at least the quality of what I now live is richer with love, compassion and in general full of life.

Dr. Wallach has many valid points on diet, but everyone I have met that follows proper vegetarian and spirituality are heathy, happy and resonably long lived. The rest of what he teaches is amazing.
I've learned to through the food groups out the window and eat as my body demands. Not that many of my family understand, but oh well! I eat in balances, and have been better for doing so. I don't eat mostly meat anymore though, that used to be the major food contributor. I make sure I get some carbs (complex mostly) and my veggies (I prefer raw these days!) and soem meat. I do it in thirds. Since starting that I;ve lost weight, gained energy and stamina! Yippeeeee!!!! For me dropping meats means lost of sugar problems, but then my body's always been weird! :)
I'll look into vegitarian diets, it might give me some insights as to what veggies to eat more of and such. Especially since I get to avoid nightshade veggies now! (I miss my potatoes!)

The proper use of eggs was another interesting and useful thing that I learned during my stay in the monastery. The Lamas would not eat whole eggs unless they had been performing hard manual labor. Then they might eat one whole medium boiled egg. But they would frequently eat raw egg yolks, discarding the whites. At first it seemed to me a waste of perfectly good food to throw the whites to the chickens. But then I learned that the egg whites are utilized only by the muscles and should not be eaten unless the muscles are exercised." I had always known that egg yolks are nutritious, but I learned of their value only after talking with another Westerner at the monastery, a man who had a background in biochemistry. He told me that common hen eggs contain fully half of the elements required by the brain, nerves and organs of the body. It is true that these elements are needed only in small quantities, but they must be included in the diet if you are to be exceptionally healthy and robust, both mentally and physically.

Okay, here we are in Acts, and God is sending down a sheet, tied on the four corners, telling Peter, the Loved Apostle, to KILL AND EAT!
God says in the end of this passage- What God has cleansed, you must not call common. he was talking about Gentiles, but he TOLD Peter to KILL AND EAT!
Act 10:9 On the morrow, as they went on their journey, and drew nigh unto the city, Peter went up upon the housetop to pray about the sixth hour:
Act 10:10 And he became very hungry, and would have eaten: but while they made ready, he fell into a trance,
Act 10:11 And saw heaven opened, and a certain vessel descending unto him, as it had been a great sheet knit at the four corners, and let down to the earth:
Act 10:12 Wherein were all manner of fourfooted beasts of the earth, and wild beasts, and creeping things, and fowls of the air.
Act 10:13 And there came a voice to him, Rise, Peter; kill, and eat.
Act 10:14 But Peter said, Not so, Lord; for I have never eaten any thing that is common or unclean.
Act 10:15 And the voice [spake] unto him again the second time, What God hath cleansed, [that] call not thou common.
Act 10:16 This was done thrice: and the vessel was received up again into heaven.
SOOOOOOOOOOO--God and the Heavens spoke, but who is listening?
It was about both. For the Jews, as is stated in Acts 11 when others asked about his going and eating with a gentile, eating food that wasn't ritually clean (OT rules laid down by God for the Jews in the desert). They weren't to have anything to do with persons who weren't jewish, not even the samaritans (who were Jewish by faith). So Peter, in that light did 2 unclean things. He ate the food tha wasn't killed, cleaned etc by Jewish customs and dined with a gentile.
It is easy for one to take scripture and twist it to mean what one wants it to mean.
The first half of your statement, Do not kill, is saying not to kill other humans. It is not talking about animals. The Hebrew word "ratsach" is translated as "kill" in the King James Version, as well as, in other translations of the Bible. Many other translations translate "ratsach" as "murder". From Strongs Hebrew dictionary the meaning of ratsach is:
A primitive root; properly to dash in pieces, that is, kill (a human being), especially to murder: - put to death, kill, (man-) slay (-er), murder (-er).
It is plain to see that the commandment, "Thou shalt not kill," found in Exodus 20:13, is not talking about killing animals, only other humans.
Another thing to think about, if you are not going to kill anything, then you are going to kill yourself. Why? Starvation, because plants are living organisms too and when your remove them from the ground or their fruit from the limb/vine you are engaging in the act of killing.
The second part of your statement, Do not eat meat, is not biblical. God spoke directly to Moses and Aaron, concerning this matter, in Leviticus 11:
1) And the LORD spake unto Moses and to Aaron, saying unto them, 2) Speak unto the children of Israel, saying, These are the beasts which ye shall eat among all the beasts that are on the earth. 3) Whatsoever parteth the hoof, and is clovenfooted, and cheweth the cud, among the beasts, that shall ye eat. 4) Nevertheless these shall ye not eat of them that chew the cud, or of them that divide the hoof: as the camel, because he cheweth the cud, but divideth not the hoof; he is unclean unto you.
9) These shall ye eat of all that are in the waters: whatsoever hath fins and scales in the waters, in the seas, and in the rivers, them shall ye eat. 10) And all that have not fins and scales in the seas, and in the rivers, of all that move in the waters, and of any living thing which is in the waters, they shall be an abomination unto you:
13) And these are they which ye shall have in abomination among the fowls; they shall not be eaten, they are an abomination: the eagle, and the ossifrage, and the ospray,
Clean fowl: Chicken, Turkey, Quail, Pheasant, Goose, Grouse, Duck, Dove
