Re: natto/does fermentation change soy? GMO?

Natto is a very powerful superfood that is yet to be fully adopted in the western hemisphere. I personally eat it a few times a week and love the taste.
Full of beneficial probiotics specially of the bacillus type which is one of the most beneficial strain to humans known to ward off dangerous bacteria. High levels of vitamin K and nattokinase enzyme makes it a must for cardiovascular health.

GMO may a concern when it comes to natto - even when mostly made of the non-standard type of soybeans (the tiny ones). Largely due to some exports to Japanese market. (Japanese are very strict with GMO isssues but struggle to keep it away from their consumers due to unregulated exports).

Part of the study below showed that fermentation process in the natto can destroy some of the modified DNA in GMO soy.
