Food Bliss - quickie

OMG, I've died and gone to heaven (again) -

I'm getting ready to make my annual HUGE batch of Pesto (enough to last 'till next fall, plus enough to give as holiday gifts).  This year I've been saving up for a 5# round of organic Pecorino Sardo (sheep's milk) cheese from Sardinia for the Pesto...and we just picked it up yesterday.  Along with a loaf of 'hard crust' organic sourdough bread from our local health market.

Well, after opening the cheese yesterday, we just couldn't wait until Wednesdays 'Pesto Fest' to give it a good taste testing - so last night I soaked a cup of 'sun dried' organic Roma tomato pieces in a cup of olive oil...and just now, threw that in the Vitamix with 3-4 cloves of garlic and about 1/2 cup of fresh basil leaves...and blended it to smithereens.  Then I sliced the bread, saturated the bread in the basil, tomato, garlic, oil blend, sprinkled it with Himalyan Salt and freshly ground black pepper and topped every slice with the freshly grated Pecorino Sardo...slid it into the broiler for a couple-three minutes...and wallah - MAJOR FOOD BLISS!

'Wish y'all were here :)  We could all "ascend" together!

P.S. YES, I believe that small quantities of organic 'meat & dairy' are something our bodies can handle (when we're not in 'healing mode').  I rarely make meals with a main course of meat or cheese (or milk or eggs)...but I do frequently use them as 'seasonings'.

I'm off to have a salad (and more bread, duh) - and then a nap, and I'll be back with a VERY big satisfied smile in my heart :)
