I have great empathy for you and certainly understand feeling overwhelmed, inability to concentrate and brain fog. This all is part of A.F.
It sounds like to me just from the symptoms you have listed: of excessive thirst, weight loss, feeling stressed out, excessive urination, and episodes of hypoglycemia that you are in an advanced stage of adrenal fatigue.
Try not to be too hard on yourself for feeling overwhelmed, because all these emotional symptoms are also due to the A.F. So, I really don't think it is a matter of "getting into the right frame of mind" for our body and emotions are constantly in flux. I do believe there are things that can help to keep calm, but oft times we are just along for the ride our body is taking us on due to poor adrenal regulation.
I am not sure how aerobic the exercise classes you are starting but just be careful b/c in advanced cases of A.F. aerobics can deplete adrenal reserves. Sea Salt to water and food, avoid potassium rich foods/drinks.
Avoid all caffiene and alcohol. Don't eat peanuts - oils can be rancid and throw you into a major allergic reaction. (have had that happen and set off major allergic reactions to foods never allergic to before)
