Sounds like liver issues to me. Try bitters for digestion an dliver issues. Enzymes never did much for me either, but the bitters have worked wonders. My personal recommendation is "Sweetish Bitters" by Gaia. Liver and digestion very related. Liver regulates cholesterol, and brown spots sound like liver spots. Also, clay colored stools = lack of bile (liver again). And failing eyesight - can be liver again. Bitters will help all these issues. Diet ok, except you might want to ditch the mashed 'taters and opt for baked yams instead. Oatmeal - make sure it is slow-cooked type only.

Edited to add - not that much of a mystery. Most symptoms are consistent with complications of candida overgrowth.
