You can fill the gaps nutritionally (mineral - wise, especially) with green/juice smoothies. Don't worry too much about him going on a mono-food jag, it's typical of kids that age and they all seem to grow out of it. Most babies loose their appetites when they're teething. Swallowing the blood takes it away. Maybe you can make some veggie/fruit smoothie ice pops for him to suck on to sooth his sore gums. There are some baby vitamins that are on the market that ARE NOT in the same vein of Flintstones type vitamins, look for some of those to help fill the gaps (http://www.swansonvitamins.com/SH264/ItemDetail?n=0), if he's growing and gaining weight and staying in his percentile, try not to worry too much about getting him to eat certain things. Babies can be picky eaters or adventurous ones. Mine was picky, only in the last few years willing to try new things. There are several really good gluten free and gf/egg free sites set up by moms with kids that have food allergies, with recipes, gf/egg free products and loads of ideas for substitutions and recipes. If he's allergic to wheat, there's brown rice, brow rice noodles, brown rice flour, and bread. If he's allergic to eggs, there are other oils that you can put in his smoothies to add the DHA, like hemp or flax. There might even be a natural teething oil you can rub on his gums for relief if you're reticent in dosing him with tylenol or baby aspirin. If you post over to natural healing and Dr Mom, they might have some ideas for you.
If you're concerned about his verbal skills, start keeping track of the words that he says over the next month. Is he willing to identify things when you're out for walks or running errands, like colors, objects?? Remember just because he hasn't said a word in a while, doesn't mean he can't say it. I'm guessing you have picture books to read with him and let him watch PBS shows like Sesame Street. You can also have him evaluated by a specialist. It wouldn't hurt and if nothing is wrong, you can stop worrying. If his speech is delayed because of some physical issue, starting speech therapy sooner is better than later. I'm a little out of my league here, I don't have any special training in this, I'm just a mom with a daughter. Girls are usually more verbal than boys anyways.
If he's teething, he probably feels crappy and doesn't want to talk much because his mouth hurts. My daughter started teething at 4 months and by 14 months had cut all her molars . She lost her first 2 teeth before kindergarten and I think only has a couple more baby teeth to loose now. I remember how miserable and cranky she was when she was teething.
Again, try to relax. I remember what it was like to be a new mom. There is so much to worry about. I'm glad that I didn't read anything about pregnancy issues, I would have been a basket case, imagining problems the whole pregnancy. I did get an amnio done, because I was over 35. After that came out fine, I simply didn't worry. I just didn't know enough then about all the possible complications and things that could go wrong. I remember the first time she got the croup at the age of three, she caught it from a neighborhood child. She woke up coughing and not able to breath. I frantically called 911 and remembered the cold air remedy. I bundled her up and we sat on the steps waiting for the ambulance. By the time it arrived (with a fire truck and a squad car) she was breathing fine and calm. It was scary nonetheless.
