Veggie lunchbox ideas

Hi,
I've been vegetarian since I was nine, and my partner has recently decided to join me. I'm really proud of him for putting his beliefs into practice, especially with his extremely unsupportive, conservative, meat-loving family. He's been doing really well, but the only problem is he's really skinny (always has been). I need some ideas for lunches for him, he is too busy in the morning with our kids to make lunch for himself, so goes to the supermarket and buys some fruit and a scone - that's ALL he eats all day, and he has a very physical job. I need ideas for lunches that will bulk him him, and that can be made ahead of time and frozen, so he can just grab them on his way out the door. He often doesn't have access to a microwave, so things that can defrost throughout the day and be eaten cold would be great. Sorry for the massive post!
