Yeah I have 2 jars like that one full of water kefir the other with a low amount of dairy kefir, as I was told it's good to do a few days just with a low amount of milk at first to get them used to it? I had a lot more water kefir though and they seem very versatile and adaptable so I just went for it, and wow they're moving! I put a lot of sugar in though! lol

Why did you stop making normal dairy kefir? I'm actually finding more pleasure in the water ones atm but I'm sure I'll experiment more and more with both!

I've been leaving the tops of the jars just slightly loose to allow the gas to escape, but perhaps in future I'll try putting them on tight! I can't wait to try the water kefir soon! I keep sipping it via a glass every so often but it still tastes sweet even though the stuff is clearly spreading! I'll give it some time! ^_^
