It's nice to hear your enthusisum. I love water kefir also. When I was more into it I bought a lot of raw ginger and peeled and cut it before I put it in and it made a nice ginger ale- when closed tightly. Was yours carbonated?

Now my favorite is kombucha scobies in real juice because they make carbonation much quicker. It uses some of the sugar and gets as bubbly as champaigne in a day or two in the frig! Yum.
