That's a good point, and I agree, we're already surrounded by so many natural and industrial toxins, like Formaldehyde (from yeast) for instance, that was recently added to the know carcinogen list. So it seems crazy to pack more toxin into your teeth. But composites are not toxin-free either and contain Bisphenol-A.

Porcelain seems to be a safer bet, but is quite expensive.

Regarding genetic phenotyping, it's my understanding that gene expression can change in response to environment, that is, genes turn on and off, but genetic phenotype cannot spontaneously change. That would require genetic engineering.

Errors in genes can accumulate due to exposure to radiation and cosmic rays, but that doesn't switch them from one polymorphism to another.

A notable semi-exception is the bacteria agrobacterium which causes gall in plants and actually changes the genetic structure of the plant, but in a very specific way.
