I agree that plain milk is bad on a candida diet. However, my theory is that if you allow the milk kefir to ferment or "ripen" for 2 or 3 days, then all of the sugars and carbs will ferment away (and convert to lactic acid), and thus will be fine to consume on a candida diet.

There are many dieticians who seem to suggest that kefir (when sufficiently fermented and ripened) will be carb and lactose free.

However, using coconut milk (which has only 1 gram of sugar) obviously eliminates any uncertainty as to whether the end product has any net carbs remaining.
