If you can do maple syrup, corn chips, and oatmeal without bloating or getting loopy in the head you might not have strong candida overgrowth. Not to say that you might have some, but if you you can tolerate those foods than it doesnt sound like strong candida. Hard to do red meat? I wonder if there is an imbalance of ammonia producing bacteria/SIBO? Do you ever have foamy/bubbly urine?

Hard to do greens and fruits. Sounds like might have trouble with harder to digest fibers. Maybe lacking the proper flora that are designed to break down fibers? Have you done any stool tests to find out your flora makeup?
