I think that xylitol has the potential to affect healthy bacterial flora, so I don't recommend it. Sweeteners can generate a Cephalic Response, whereby insulin is secreted in response to the sweet taste. This can create oth changes that affect hormones, immunity, neurological function, etc.
Mercury is probably not big enough of an issue to prevent you from correcting candida in the body. I would recommend some type of protein like eggs. People who have health issues also have a higher need for protein. For correcting the fungal candida imbalance, I recommend the McCombs Plan. If you have blood sugar issues, those should be addressed at the same time. Keeping the bowels moving is important for detoxification.
