The coffee is really playing havoc with the adrenals...How about switching to green tea, for a time. And then maybe rooibos, which is mineral-rich. As far as salt goes, good Sea Salt , kelp and sea vegetables are fine. And will help you, with your adrenals.

As long as you feel you lack 'the energy' you feel you need for work, you're in a catch-22, as you know. Best things to do would be to start feeding yourself with nourishing herbs, and letting your food be (more) your medicine. For example, you might try chaga, as a coffee 'substitute'. Substtute is really the wrong view to have--it will always make a person feel they are in lack; but I use the word since that's where 'we're at', at this point. (But let's not forget we are so much bigger, stronger and more perfect than we can imagine, at the moment.)

And maybe try things like "inka"--? which is chicory and barley... Look into other adaptogens; that which does not flog the system while amping it up.

The 30-day wfast sounds like it was classically interrupted, alas. Starting to eat while the body is in purge mode is like travelling in two boats. :-) I would be inclined to do more rebuilding, before trying to cleanse metals via another long-ish wfast.

I tend to eat quite a lot of cilantro--still have several amalgams, and seem to be doing quite well; but we do need to be constantly looking at food as medicine.

In the last link Chris posted, this struck me as important

Whole foods healing (and chelation) is the way to go, in my view. Combined with water fasting that is not interrupted, and is broken well. (now you know--so you'll be better prepared next time. Consider 21 days--rather than thirty.) As well, perhaps homeopathics might resonate with you, for the metals.

PS edit: Constant low-grade headaches sounds possibly food-related, to me. Small amounts of gluten, even in the form of soya sauce or tamari, could be enough to do that.
For depression and hopelessness, I would try EFT and Ho'oponopono. EFT leads one sort of naturally into the Ho'oponopono--whereas otherwise it can seem a bit too much like undoing one's entire worldview. Which is what we really want and need! but, gently is the best way.
