It will ripen and not be acidic- at worst it will be watery vs creamy
Put it in a brown paper bag, in a dark cupborad- I think any cupborad being dark by nature- will do.

Check every 3 days until you feel a give feeling at the gentle squeeze of your hand..do not wait until it is soft it will be too far gone
Wait until it gives
Do not leave it in the cupborad unachecked over 7 days

I do this weekly, it is quite a challenge to keep a steady supply all in the right stage of ripening
I do admit sometimes 4 come into their maturity at the same time then it's time for quacamole

Recipe for Quac

3-4 medium size avos (can be slightly overripr)
1/2 small raw red onion
3 -4 tablespoon authentic greek yougurt
squeeze of fresh limon or lime
cilantro finely chopped (to taste)
for the heat
1 fresh serrano chile finely chopped-lose the seeds
stir it up and add to whatever you are eating as a topping
