Re: diabetic recipes...i have another!

This is my ultimate FAVORITE! Of course I'm a spinach freak, so if you don't like spinach you may not like this....

Spinach Casserole
2 cups cottage cheese (it says fat free...use what ever kind you like, it will not change the carbs)
1 cup Cheddar Cheese (also SAYS fat free)
10 oz. package of frozen spinach or 1 1/4 c fresh
3 large eggs or 3/4cup egg substitute

Combine all ingredients and mix well. Spoon into greased/ spray coated casserole dish. Bake 45 minutes at 350*. (6 servings)

This has 7 grams of carbohydrate, 25 grams protien per 1 cup. When using fat free cheeses and egg substitute there is no fat, but 10mg Cholesterol,127 Calories,1g of fiber, and 633mg of Sodium.( I added all that because I'm not sure what each person may need to know here)The calories and fat would of course increase if using fatty cheeses and real eggs...

Exchanges: 1/2 vegetables, 3 1/2 meat (it would be a "very lean meat" if, again, NO FAT)

My mouth is watering ...I love this....may have it for supper as long as the spinach is no longer contaminated!! LOL
