Im wondering if the stuff you purchased from http://www.liberte.qc.ca/en/page.ch2?uid=Yogurt
was a little different cause my kefir has an ever so slight carbonation if i leave the lid on, nothing like a soda pop though. And it never fizzes, so if i were to guess, you are probably producing good kefir but the stuff you purchase they did something special to it.
