Tabouleh!!
1 cup ea Bulgur wheat & water to soak
1 bunch of fresh minced Parsley
1/4 cup finely chopped mint
2-3 Scallions chopped
1/4 tsp ground Black Pepper
1/2-1 tsp of Sea Salt
1/4 tsp ground Cumin
2 medium chopped Tomatoes
Juice of 2 to 3 lemons ( I prefer Limes)
4-6 tbsp Virgin Olive Oil
1 medium Cucumber peeled, seeded and chopped.
Soak the Bulgur for about 1 hr
Mix in a big bowl refrigerate for about 1 hr
Enjoy!!
