I believe that is it's initial PH, before it enters digestion. Like lemon is extremly acidic to begin with, but also has an extremly acidifying effect on the body. The ph effect on the body of Agave is still something i can't find.

I do very well on Maple Syrup and it tastes ok (thou i must admit Agave syrup tastes better) so i wouldn't change something that's already good if i didn't have to. I'm from Europe, and they still use the C grading here...i've never seen a "B" grade maple syrup. Unfortunately organic C grade is sold out from entire city, seems there is a shortage from supplier, so i opted for Agave rather than A grade. Incidently, Organic Agavae syrup is cheaper here than the organic maple syrup...a lot cheaper actualy, which probably only means that Maple syrup is ridicoulosly expensive ($14 for less than half a quart).
Anyway, i did some formus searches and people talking about using Agave had only positive things to say (like no difference in energy levels, etc) thou mostly it was how it's the same except they enjoyed the taste better. For now the only thing that bothers me is the PH question.
