Interesting idea. Not to be a downer on the parade, but isn't this a winter squash and a bit higher on the glycemic index than, say, zucchini or crookneck squash? I suppose for variety........... I could eat this now and it sounds good, though in the beginning I couldn't eat winter squash (acorn) as it had too high Sugar
content for me. Everyone's different.
BTW do you put anything on top of the sauce in the way of protein? I suppose you could put chicken, turkey....
