As I'm typing, I'm actually eating a dandelion salad for the first time this year!
what a coiincidence :-)
Here's how to make a yummy dandelion salad:
1- cut to bite size pieces of dandelion leafs
2- one garlic clove chopped up into tiny pieces
3- one raw homegrown tomato (if desired)
4- some chives cut up
5- Some sunflower seeds or pistachios scattered on the salad
6- Hardboiled organic egg (if desired)
1- Olive Oil
2- Raw apple cider vinegar (like Bragg's- which you can get for $2.95 a bottle)
3- Balsamic Vinegar if desired)
4- Brewers Yeast
pour a little of each vinegar and squirt some olive oil in a glass bowl together-- toss in about 2 tablespoons of Brewers Yeast powder.
Mix with a small fork--as though you were mixing eggs --- the consistency will thicken somewhat (even without the brewers Yeast)
Pour over the greens and toss.
