I tried the specific carbohydrate diet for all of three weeks recently (no grains, but allows some fruit and home made yogurt, even honey, though not right away). some people claim great results with it for candida, even though it's geared toward crohn's and colitis. For me, my bowel symptoms got a lot worse on it for reasons unknown, so I'm regroupiing with grains again and I think I'll try a combination of that with the Body Ecology diet and just keep the starches to a minimum, with a focus on food combining, naturally fermented foodsm, and acidophilus supplementation. I usually feel like crap on antifungals, so I think I will try an enzyme based product.
You might want to check into the cook books and online recipes for SCD diet, just google it and look around. They use almond flour as a replacement for grain flour, it's expensive, but since it's nuts you want to use it in moderation, anyway. I made some pancakes with almond flour, eggs, baking soda, and threw in a little cinnamon. You could top those with some butter, powdered stevia and cinnamon for a low/no carb breakfast. They're actually really good, taste like french toast. Could you have baked granny smith apples? I did that one day with the home made yogurt, it was pretty good.
