Great suggestion on the Budwig diet ... I would use organic cottage cheese. We love the taste of it with just the cheese and the flax oil, but we eat pretty basic. Great idea!
And you are right on target about the water ... drink, drink, drink ... filtered or distilled, and then conditioned (alkalized).
And, adding grass powder to the water you drink is also an excellent way to boost the nutrition you get in ... my wife and I add about a teaspoon of mixed grass and veggie powders to our liters of water.
