Let me try to answer for my friend, Lara - the creator of LaraBars. Lara was a former team member of mine while we both were employed at Whole Foods Market. There, she developed her passion for raw, natural food.

Yes, they are completely raw. No cooking, no steaming... raw food. Thus, they retain all the attributes of raw nuts and fruits. If you note - most of her fruit ingredients are dates, cherries and apples. None of these are preserved with sulfates.

I'm really, really proud of her success and her dedication to not giving one inch on staying true to real, raw food.
