Whole food nutrition isnt a theory nor is it trumpable.But I am very glad to hear that juicing has giving your body what it needs to get fantastic results.As with all things in life there is room for improvement,carrots and apples are low on the nutrient density scale and high on the glicymic index.Even Ann Wigmore in her later writings went away from juicing and more twords whole living foods in the healing institutes of hippocrates that she ran.Ann Wigmore along with Lee Paterson wrote a book called The Blending Book "MAXIMIZING NATURES NUTRIENTS".These protocols are used at most of the healing institutes in the usa today.And as you said the results speak for themeself,juicing is generaly an introduction into the living foods lifestyle.Juicing shouldnt be a lifestyle just a small augment of nutrient dense foods that cant be accessed well through eating.
