No Potassium for Dialysis Patients?

- My brother had kidney failure last month and has been on dialysis. He said a few days ago that the nutritionist asked him to avoid foods with potassium, because dialysis can't remove potassium. If he can't have foods with potassium, what does that leave for him to eat? Just junk food?
- Is kidney failure reversible? Someone said flax oil with cottage cheese can rejuvenate the kidneys. Would that apply to kidney failure too?
- Would dry, soaked, or sprouted flax seeds work as well as flax oil?
- Thanks for any help.
