Actually moong vadi is eaten with cooked vegetables like onions and vadi dish. I hated that when I was kid and mom would make it. I also just ate them raw. Mom would always say that I am going to have stomach ache. I normally ate all raw vegetables anyway.
In leafy greens you could have broccoli, Although not leafy, snow peas, and Brussels sprouts are the best sources with carb/protien combo.
You can sprout your moong after soaking it for 20-24 hours and also you can pressure cook them. I eat them with Sea Salt , cayenne pepper and canola oil. That was my dinner tonight, moong sprouts. I love them. Try them.
