Yes, you can ferment Cabbage (Sauerkraut) and Carrot or any other Juice with Kefir Grains!
They will ferment it - one setback: if it is not a real Milk - those Grains will not propagate... They will work - but not grow…

Aqua Kefir/Rice is good too - so is Kombucha, but I believe, Kefir Grains are the best for you at this time!
They all different so - You could get all of them!
Combining them or introducing one by one in your treatment - will only benefit you!
I would start with the Kefir Grains - the other 2 are fermenting on Sugar... I would wait with those a bit - until you get better...

Also, my Recommendation - IMPORTANT! - you should switch only to - Raw & Fermented (pre-digested) Food!
Let Natural Enzymes in Food digest your Food for you!
At least temporary - until you get cured!
Or try to stay 80% on raw and 20% on “dead” food - to start…
