I was on the Candida diet for 8 months. In the beginning, I was in the SAME boat as you, and didn't know what to eat!!! I was cured, however...it takes some time, but it DOES work - I know someone posted below that says it doesn't work, but it sure did for me!!! Of course, you have to also FIGHT the Candida with supplements too - please, please read my story at sugarloverscandidadiet.wordpress.com. I am trying to help people because I was so happy to figure out what was wrong with me and to be cured!! You can get tested for Candida, and the test (electrodermal screening) will tell you what supplements you should take as well, to kill the Candida.
That being said, to answer some of your questions:
I DID eat berries (straw, blue, rasp) the WHOLE time on the diet. In the beginning, I only ate them once a day, though. Berries are the lowest Sugar fruits (besides lemons, limes) and I found they did not affect my Candida killing progress. I couldn't live without SOMETHING sweet! :)
Quinoa is FINE to eat! I ate it as well! In fact, there are some great recipes for quinoa - please visit these websites below. The first is a GREAT website to find info and recipes about the Candida diet - seriously, it is my favorite. The second is good too:
Finally, I also ate one type of bread throughout (although I did wait a month to eat it...my nurse that did the test said it would be fine, but I wanted to make sure). It is called Ezekiel 4.9 bread and you find it at any Whole Foods or natural food store (even in organic section of some normal supermarkets) and it is in the freezer section. This bread is awesome. I would eat two slices toasted with almond butter and stevia for my breakfast!
Honestly, the biggest thing is cutting out the biggies: sugar, wheat, mold (cheese), vinegar...
