Because acids control yeast, and alkalinity promotes it. For example, Candida thrives in an alkaline environment as alkalinity turns the Candida's growth gene on and converts the Candida in to its highly aggressive and pathogenic fungal form. Acidity turns the growth gene off and keeps the Candida in its relatively harmless yeast form.
