I believe your symptoms can very definitely be related to SIBO. Ammonia is a common toxin produced by "bugs" in the upper gut. It would take a lot to make you smell of it, but I do think it's within the realm of possibility.
Also, SIBO can also cause malabsorption of protein (Protein Losing Enteropathy) which puts stress on the kidneys. General Edema is a symptom, as is Abdominal Fluid Retention. So, you may have both issues, with the SIBO being causative of the Kidney problem.
The fact that the Natren Probiotics helped suggests that you are on the right track. It also suggests that it's reversible. It's certainly worth trying the Vitamin C as it's capable of treating both problems.
I just use the Trader Joe's brand. Nothing fancy. Just be careful at first. You will feel it coming on like a slowly building storm.
You might want to pick up some Magnesium/Calcium Carbonate (aka Dolomite) in case you need to put on the brakes, so to speak. I haven't had to use it, but it's nice to know I can stop it if I accidentally take too much C.
Also, IMO you should limit your intake of Protein for a couple of days until you figure it out, just to take some stress off of your kidneys.
Yeah, I love the spices. Ginger's another good one.
