I have flushed very well when eating fish for lunch on the day of the flush, so lean meat should be OK. Other people posting here have eaten anything from pizza to hamburgers and still got the stones out. Also, the "no fat" rule as you call it does not apply for everyone, you have to find out what works best for you and trust your own gut feeling.
I rarely do anything different from my everyday diet on the day of the flush, I just won't eat after 2 p.m. (or 4 p.m. as I usually move all times forward to better suit my bedtime).
