OP, try sprouted beans and potatoes for carbohydrate, along with what Anthony said about the fats. Some people can tolerate sprouted grains (amaranth/rye/buckwheat/millet) of the nonglutinous kinds..
If you're concerned with weight, what I've been focusing on most is retaining any lean mass you have with weight bearing exercises (body weight if you don't have access to free weights), rather than loads of cardio. Think weighted squats, lunges, pushups, deads, rows. That will help your body not cannibalize your muscle tissue because you're still using it. In theory anyway. I'm too stinking tired to think about working out, but I imagine if I lost too much weight it would concern me too.
