I don't think it's a good idea b/c food is the body's fuel. You will be tired all day. Furthermore, Your blood sugar will be very low, and our bodies need protein, carbs etc to maintain healthy cells, so not eating every day except one meal will starve them. Even if you just eat fruit or salad all day, and then one meal which will be dinner at night is okay. But to not eat at all all day is not advisable.
You are vegan so you don't have to worry about your body going into shock everyday b/c after fasting for 24 hours you are supposed to break the fast with fruit, juice, or a small salad. Keep in mind that you may feel faint, and exerting yourself, even a little will make you feel dizzy or disoriented b/c the brain and body isn't being nourished. Again, I would advise that you eat something during the day for nourishment even if it's only apples and oranges, or veggies.
