Firstly, the guy in the interview speaking for Oslon is low-carb promoter Steve Phinney who has Type II diabetes (it was low-carb guru Tim Noakes who has diabetes), who's obviously going to be biased towards low-carb, and has been totally debunked:

Sample menu from Olson's own website where you can see he is definitely not "low-carb":


- Breakfast – 200 cal of Justin’s Hazelnut butter (Dry Roasted Hazelnuts, Dry Roasted Almonds, Organic Cane Sugar)

Snack after run – green smoothie (kale, bananas and strawberries)

Lunch – chicken, veggies, sweet potatoes with coconut oil

Dinner – chicken, sweet potatoes with coconut oil

100-200 calories an hour using VFuel (1 packet = 23g carbs) and maybe some soda (Sierra Mist) in the later stages of an ultra

The true test is to see what his macro ratio is. It's probably around 40-30-30 like those other "low-carb" athletes.
