Another Recipe


It's great to find a new food that works on this diet, so I'll pass this one along...

Spaghetti Squash!
It's a large yellow squash that can be eaten just like spaghetti with a tomato or pesto sauce. Can be purchased in most grocery stores.

Cut in half and then quarter each half--8 pieces total, each is approx 1 serving.
Brush with Olive-Oil and salt, then bake at 400 for 40 minutes or until tender and slightly translucent. Scrape the meat from the skin and mash/separate with a fork. Comes off as a completely acceptable spaghetti! Top with your favorite sauce.
Freezes well.
