One I really enjoy is prawn coconut curry...v simple:
fry onions, add sliced red pepper..fry a bit more
add a teaspoon of medium curry powder, 3 crushed garlic...stir for a few mins....add coconut milk (make sure it is a PURE one, no additives, Sugar etc)- simmer this until it reduces slightly then for the last few mins add the prawns. It's delicious!
You can have quinoa or brown rice with it occasionally but if you're carb free then just have it on its own. Mmmmmm
Wrap white fish in aluminium foil- add garlic and basil OR lemon and ginger OR leeks and tomatoes (anything you like) and serve with other steamed veg or salad
look out a recipe for vegetable dhal (with lentils)
roast chicken with pesto (make your own with basil, toasted pine nuts, olive oil and garlic- leave out the parmesan)
roasted vegetable soup (with home made stock)
Leek and spinach soup
frittata (similar to a vegetable omlette but you could use pre-roasted veg..should be plenty of recipes on the internet for this)
mince (as a plain sauce or own burgers (without breadcrumbs) and salad)
