Nope! beets and carrots keep their amazing ability to help the body even when cooked. I simply boil beets. I clean them, take off the greens, cut them in halves or quarters and boil them in just enough water to cover. Takes about 45 minutes. Just until fork-tender, not totally soft. Chop into bite-sized pieces, butter and serve! :)
That's a great liver-cleansing salad! Be sure to use some kind of oil too in order to force the liver to give up bile. That will ensure that the carrots get to the bile to cleanse it, and the minerals in the cilantro will get absorbed.
