Healthy Fats, Coconut ?? Palm kernal Oil??


I am now totally confused over the fat thing, upon researching different oils people seem divided, inluding Drs and Naturopaths about what is healthy, some say coconut ...but that has almost the same makeup as palm kernal oil which I have read is very bad for you especially the fractionated ones that seem to be in all the "health bars" lately. Both very high in saturated fat,which is supposed to be bad for the arteries. Olive is good but not heated ?? Then how come italians do so well with it... using it in sauces that are heated and boasting very little heart disease etc . Flax and sesame ??
Some bad mouth Canola and others praise it including Patrick Quillin author of "Beating Cancer with Nutrition" ( which I found to be a great book.)
How can there be so much confusion even among naturopaths and health specialists....if they can't make up their minds how are us regular folk supposed to do so...

Frustrated. :-(
