I just started doing the Body Ecology diet about a week ago, and have been buying the cultured veggies until I can start making my own. I ordered a special crock to ferment them in - sounds like it prevents mold growth, and does 7 quarts at a time. I haven't been doing it long enough to tell whether it's fighting the candida, but they do seem to aid digestion. I would imagine that adding lots of live pro-biotics is essential in treating candida. I don't know about you, but I've been so tired on this diet. I was eating a healthy, whole-food diet before, but I think it's removing the oats and spelt, and eating very low carb and doing the food combining that is zapping my energy. Im sure I'll rebound and it will be good in the long run, but not sure what creates the extreme fatigue in the beginning.
