So sorry you have problems with insulin that may lead to diabetes and heart problems. That would definitely serve to make one sensitive to such issues. However, olive oil when used in balance with a diet full of veggies and fish is a much better diet heart-wise than the standard american diet. They call it the Mediterranean diet as that is how the Mediterranean peoples eat, and they have much fewer problems with diabetes and heart attacks per capita than the US.
I refuse to vilify an oil that has been around since before the Roman Empire. It is not perfect, very few refined/concentrated foods are, but you have to look at your entire diet, not just the one thing, to know if you are in balance. Balance is key. Making a demon out of one food will not give you vital health.
I suggest you read up more on prostaglandins and substitute Flax Seed Oil for olive oil whenever you can; you can't heat this oil however, you can only use it cold for like salad dressings.
