Scalloped Tomatoes

From The Lazy Person’s Whole Foods Cookbook, available from http://www.powerhealth.net/books.htm

A Southern United States favorite that is rich in the antioxidant lycopene, vitamin C, and minerals, this dish is easy to prepare and goes great with any entree.

2 cups of tomatoes, diced (you may use canned tomatoes)
3 tbsp of butter
1 cup sprouted whole grain bread cubes
(you may also use sourdough whole bread cubes)
Sea salt (unrefined) and pepper to taste

1 cup of sprouted or sourdough whole grain bread or cracker crumbs (Wasa Sourdough Rye crackers are excellent)

Fill a well-greased baking dish with alternate layers of tomatoes, butter, and bread cubes. Cover the top with crumbs and bake at 350 Fahrenheit for 30 minutes. Serves 4-6.
