kefir production - confused?


Im just starting out the kefir production cycle..

Ive added the grains I was given to a jar of goats milk and left for 36 hours. There is now thick lumpy looking stuff (like cottage cheese) in the top half of the jar, whilst the bottom half is clearer liquid - Are all the lumpy parts the new kefir which I use to make the next batch?

Not sure - do i just drink the thin liquid bit and then use the rest to produce new kefir??
