Some books are very much against fermenatation. I think it turns a dead food into a lively food! I keep 55 gallons of apple/pineapple vinagar all the time! The mother will get 2-3 inches thick at times.
If you want the fungus to get pass the stomach unkilled, they reccomend you kill the stomach acids with a large glass of milk first and another glass right after you swallow your fungus! This gets things stired up!
